What's In It? Wednesday

Because I do love food, half of what I twitter/facebook about is...well, FOOD! So, some have asked if I could share some recipes, and of course, that's a brilliant idea! So, I thought I'd start sharing recipes on Wednesdays with what I'll call:
What's In It? Wednesday

(This first one's for you, Kacy!)

To kick it off, this is Potato Soup that I learned from my husband's aunt, who is a true chef and can make nearly anything...and make it well!

I, unfortunately, don't have a better picture of my soup than this, sorry! Hopefully you can still see that it's a colorful soup, with carrots and parsley and celery, too.


6 cups potatoes, peeled and cubed
5 cups water (yes, really)
2 cups onions, diced
1/2 cup celery (You won't want any more than this)
1 cup carrots, sliced VERY thin (I actually put more like 1 1/2 - 2 cups because I like them!)
1/4 cup real butter (1/2 a stick)
4 chicken bouillon cubes (or 4 teaspoons of the powder)
2 teaspoons salt
1/4 teaspoon pepper

One 12 oz. can evaporated milk
1 1/2 Tablespoons parsley flakes (Go EASY on this...and it floats to the top, so stir it around for each serving.)

Combine first 9 ingredients in LARGE pot and cook uncovered on med-high heat until veggies are tender (about 30 min). Stir often so it doesn't stick! Add milk and parsley. Cover and cook just until heated through.

This makes around 10 servings. When having another family over, I double the recipe and use my SUPER HUGE pot! This is also very yummy with homemade garlic bread. My favorite way is to use hot dog buns, pulled apart. Spread margarine lightly over each piece, then sprinkle garlic powder on top. Broil on high until golden brown.

I hope you enjoy this, especially with fall just around the corner! It just doesn't get much better than crisp air slipping in through the windows, a blueberry candle on the warmer, and this potato soup on the stove!
