What's In It? Wednesday: Ranch Chicken Penne Pasta

Another easy dish to whip up all in a skillet:

2 1/2 Cups uncooked penne pasta
6 to 8 Tablespoons butter, cubed
1 envelope ranch dressing mix (if I add pasta and veggies to stretch it out for guests, I use 2 envelopes)
1 Cup frozen broccoli and carrots (and cauliflower if desired)
3 Cups cubed cooked chicken (or turkey)

(Before doing anything, you'll of course need to thaw chicken out and then cook it however you like. Sometimes I sear mine, and sometimes I bake it
. Either way, I use garlic powder and onion powder for seasoning.)

Cook pasta according to package directions.
Meanwhile, in large skillet (and I do mean large), melt butter.
Stir in ranch mix until smooth.
Add broccoli and carrots; cook and stir for 3-5 min.
Drain pasta and add to skillet.
Stir in chicken or turkey, cook for about 5 min. or until heated through.

I like to serve mine with homemade garlic bread.

And what better to top it off than orange kool-aid? (Or, maybe that's all we had...)

  1. That looks really simple. My kids love garlic bread with anything. The smell of it cooking fills the house with such a delicious smell it gets the kids sitting at the table before I have even called them!
